I am more of a non vegetarian person than veg though I Iove veg food too.
The sudden stop of non veg supply during lockdown made me explore many vegetarian dishes and for almost 3-4 months I survived on Vegetables and I loved it. In our place milk and dairy products were in regular supply even during the lockdown.
So I often made Paneer roll with various versions on demand of my son as and when whatever was available and veg momos too in various versions and many things which I had not prepared for quite sometimes....So today I am sharing with you Beetroot Paneer Roll....if you don't want to add beetroot simply skip it.

Ingredients and spices that need to be Take to make Beetroot Paneer Roll:

  1. 1/2 kg Paneer
  2. For Paneer marination
  3. 1/2 tsp Coriander powder
  4. 1/2 tsp Cummin powder
  5. 1 tsp Chaat masala powder
  6. 1/2 tsp Garam masala powder
  7. 1/2 tsp Kashmiri Red chilli powder
  8. 1/2 tsp Chilli powder
  9. 1/2 tsp Turmeric powder
  10. 1/2 tsp Black Rock salt
  11. 1/2 tsp Crushed Black pepper
  12. 1/2 tsp Ginger powder (or paste)
  13. 1/2 tsp Garlic powder (or paste)
  14. 2 tbsps curd
  15. 1 pinch saffron (optional)
  16. 1 tbsp Mustard oil
  17. For cooking paneer
  18. 2-3 tbsps Mustard oil
  19. 1 pinch Crushed Black pepper
  20. 1 pinch Salt
  21. 1 small onion sliced
  22. 1 small red bellpepper sliced (optional)
  23. 1 small yellow bellpepper sliced (optional)
  24. For Beetroot Puree
  25. 150 gms Approx. Beetroot peeled and cubed in small size
  26. 2 cups water
  27. 1/2 tsp Salt
  28. For Beetroot Dough
  29. 300 gms Maida / All-purpose flour
  30. 50 gms Whole wheat flour/ Gehu Ka atta
  31. As required Beetroot puree
  32. 1/4 cup water or as required
  33. 2 tbsp veg oil
  34. 1 tsp Powdered sugar
  35. 1/4 tsp Salt
  36. For cooking Beetroot Paratha
  37. as needed Veg Oil for rolling and cooking /frying the parathas
  38. For Paneer Roll stuffing
  39. 20 gms Beetroot
  40. 75 gms carrot
  41. 125 gms onion
  42. 1 Cucumber (optional)
  43. as required Juice of one Lemon
  44. as per taste Black Rock salt
  45. 1 pinch or two of Black pepper crushed
  46. As per taste Tomato/ chilli sauce (optional...I don't add)
  47. To sprinkle more as per taste
  48. as required Black Rock salt
  49. as required Black pepper crushed
  50. 1 Lemon juice

Instructions to make to make Beetroot Paneer Roll

  1. Peel and chop the beetroot into small cubes, add water and salt and bring to a boil till it becomes soft and mushy. It took me half an hour in a half closed lid pot. Leave it to cool with the lid closed.
  2. Soak the saffron in the beaten curd for at least an hour. Cut the paneer into medium sized cubes. Put all the dry ingredients, mustard oil, curd with saffron, lemon juice in a bowl and mix. Then add the paneer into the spice / masala concoction and marinate it and let it rest for an hour.
  3. After one hour, heat oil in a kadai and add the onion and saute for a minute and then add the bellpepper and a pinch of salt and black pepper, saute for a minute. Then add the marinated paneer, mix and cook for about 5-10 minutes till the oil seperates from it....be gentle.
  4. In the meantime, chop/ slice the red and yellow bellpeppers and onion. Puree the beetroot with the leftover boiled water. Take the flours, salt, sugar and mix then add the veg oil and mix then add the puree (do not add at one time add as needed). If needed add water to knead the dough (I needed 1/4 cup water). Make it into a soft dough and let it rest for at least 20-30 minutes.
  5. For the stuffing, julienne the carrot, beetroot and onion. Chop the chilli and coriander leaves. Then in a bowl mix everything with black rock salt, black pepper and lemon juice and keep it aside for assembling later.
  6. Now when everything is ready for the stuffing. Make the Paratha for the Paneer Roll with the beetroot dough. Divide the dough into 6 smaller dough balls and apply oil to help in rolling it out to form like round Rotis/parathas, put it on a hot tawa and cook and fry it just the way you would make any paratha.
  7. Once the Paratha is ready, assemble the stuffing of paneer and veggie mix, sprinkle black rock salt, lemon juice and black pepper as per taste. If you like sauce please feel free to add and make the paneer roll as per your taste.
  8. Roll it and wrap a paper at one end and serve it while it's still hot. Bon Appetit!!!
